Saaremaa anchovies with carrot and leek

I found this foodstuff while actually looking for smoked eel. I was surprised to find how good spiced sprat is with its exciting flavour nuances. Bit by bit, it became clear that this is what will be used for the selected dish.

Our dish will combine the saltiness of spiced sprat, the sweetness of carrot, and the delicious light leek marinade. We will put them together for the chance to complement each other and create a fun harmony of the sea and land.
